  3. With six years under my belt I was in the number two spot running a cafeteria with nearly a hundred people on staff, feeding two thousand meals a day.

    Two days a week I was the man on horseback when the boss was off. Not a meal passed that I didn't see a bunch of stuff going wrong.

    But among my earliest lessons: If it ain't too broke, don't fix it.

    Do a postmortem later with the aim of preventing it next time.
